Mauviel, the leading cookware manufacturer for professional and household chefs worldwide, is renowned for its products made in France. The 3-piece set includes a 7.9" frying pan, a 9.4" frying pan, and an 11" frying pan, all boasting excellent conduction.
These pans are crafted from extra-thick black steel/carbon steel with iron handles, providing exceptional heat conductivity. The black carbon material heats up quickly, making it an ideal choice for searing, browning, and grilling.
The commercial-grade durability of these pans allows for longer preheating and excellent searing capabilities, thanks to the rivets made of stainless steel 18/10. Before the first use, the pans should be seasoned per the manufacturer's recommendations, which will build up a natural non-stick property and cause them to darken over time.
A beewax coating is applied to prevent the pans from rusting and to simplify the seasoning process. Prior to the first use, the coating should be removed by cleaning the pans with very hot water. If any wax residue remains, it can be wiped off with paper towels.
To season the pans, the bottom should be covered with flavorless oil and heated for 5 minutes. After the pans have cooled, the oil should be drained, and the pans should be wiped clean with paper towels. This process should be repeated a second time, and the pans will be ready for use.
It is important to heat the pans slowly, as they have excellent conductivity. The cooktop knobs or controls should be used at a 60% capacity, meaning a level of 6 on a scale of 10. Excessive high heat for an extended period should be avoided, and the pans should not be left empty on a heated burner for an extended time.
To maintain the pans, they should be hand-washed with hot water immediately after use and then wiped with paper towels. The layer that gradually forms on the bottom of the pans is not dirt, but rather a solid, non-stick film that should not be removed. Before storing the pans, they should be lightly greased with olive oil to prevent rust.
The pans are not dishwasher-safe, and the use of metal utensils, scouring pads, steel wool, abrasive cleaners, bleach, and/or oven cleaners is not recommended, as they can scratch or damage the non-stick cooking surface. Misuse of the cookware will void the warranty.
